This is one of my go-to dessert recipes. It is so good and always a hit! I love the creaminess with a hint of crunch – so delicious! If I am in a hurry, I often skip the crust and just divide the layers into individual serving dishes; this makes the whole process quick and easy when last-minute guests arrive.

Pie Crust:
1/2 cup Butter
1 cup Flour
1 cup Chopped Walnuts

First Layer:
1 cup Powdered Sugar
1 (8oz) package Cream Cheese
1 cup Cool Whip

Second Layer:
2 regular sized packages Instant Pistachio Pudding Mix
3 cups Milk

Cool Whip
Chopped Walnuts

Mix first three ingredients; press into a 9×13 inch pan. Bake at 350F for 20 minutes. Cool. Mix next three ingredients; spread on cooled crust. Beat together pudding mix and milk until thick. Spread on top of first layer. At this point, I usually refrigerate the dessert and add the cool whip topping and chopped walnuts just before serving. But feel free to add toppings before refrigerating if you prefer.

Every Good Thing

As I was searching through blogs I follow, I stumbled upon a song by The Afters. The words really struck me. Far too often we (myself very much included) take the simple pleasures of this life for granted.

Being a momma of two, I get so caught up in the busyness of life. There are little noses to wipe, toys to pick up, fingerprints to wash off the windows, ‘owies’ to kiss, meals to make, and loads of laundry to fold. I find my to-do list is never-ending and my hobbies go untouched, sitting half-finished in the corner, collecting dust. This song couldn’t have come at a better time. It reminded me to just sit back, relax, and thank the Lord for all He has done.

Each and every thing we have in this word is from our Father in Heaven. Those little noses are so precious and perfect for Eskimo kisses. Those toys to pick up show me how much fun the kiddos are having and that I was able to spend time making puzzles with them. The fingerprints to wash away remind me that God has given us a beautiful home to live in. The ‘owies’ give me extra snuggle time with the little ones. The meals to make remind me I was blessed with a family to love and cherish. The laundry shows me that we have been given much in abundance.

So sometimes, us momma’s just need to take a break from all the housework and cleaning, and remember to enjoy those little moments in life. Those times when your 2-year old starts a water fight. Or your 12-month old is spitting out food and making silly faces. Or they both just want to snuggle on the couch and watch another episode of Bubble Guppies.

So my prayer today is simple: “Lord, thank You for each and every moment of this life; for every good thing. For my husband, our children, and all that You have blessed us with. Help us never to take it for granted, and to live each day knowing You are at our side and to enjoy every moment. Amen”

The BEST Chocolate Chip Cookies

Based on the ridiculous amounts of Chocolate Chip Cookie Recipes out there, I think it is safe to say that everyone has different preferences when it comes to cookies. It is difficult to find that one special, go-to recipe that works great for your family. Believe me, I know. I’ve been there. I have gone through countless recipes in search of the softest, chewiest, moistest, simply BEST Chocolate Chip Cookie possible. And I have FINALLY found it!!!! Just the thought of this delicious little cookie makes my mouth water! This chocolate chip cookie is so good, I could literally eat the whole batch in one day!

(I did not have any chocolate chips on-hand so I made homemade chocolate chips, as pictured)

So without further delay, I give you….THE RECIPE!!

The BEST Chocolate Chip Cookies

1 cup Butter
1/2 cup Sugar
1/2 cup Brown Sugar
1/4 cup Corn Syrup
1 Egg
2 tsp Vanilla Extract
2 1/2 cups Flour
1/4 tsp Salt
1 tsp Baking Soda
1 cup Chocolate Chips

Soften butter. Mix first 6 ingredients in large bowl. Add remaining ingredients and mix well. Drop by tablespoon-full onto greased cookie sheet. Bake at 350F for 9-10 minutes. Cool cookies on the pan for about 5 minutes. Enjoy ❤

First Camping Trip of 2014!

I LOVE CAMPING! My husband?! Not so much… Well, I should actually say that he used to not like camping very much. But I think I may have changed his mind after this weekend 🙂

We went on our first camping trip in almost two years this past weekend. And let me say….WE HAD A BLAST!! Yes, even my husband! The kids were little angels the whole weekend and the campground where we stayed was amazing! There were so many extra fun activities to do, that in the five days we were there, we didn’t even get around to them all! It also helped that we went camping with some really good friends. Hope they had as much fun as we did!!

We stayed at Old MacDonald’s Resort on Buffalo Lake, Alberta. I would definitely recommend this campground to anyone and EVERYONE!

OK, I will admit, I think us Mommas had more fun at the lake than the kids! Unfortunately I don’t have any photos of us floating around in blow-up-boats, being buried in sand, or making rivers…but I do have a picture of the castle and mote! Can’t go to a lake without making a sandcastle!! Ethan seemed to enjoy eating the muddy sand which was an added bonus! (NOT)

Best part about the merry-go-round, it was only 25 cents! And the fun thing was, if you get your shoe into the milk crate while the ride is in motion, you get your quarter back! Which we managed to do! YAY!!

Oh and I nearly forgot! Guess who celebrated a birthday while we were camping?!?!?!
THIS LITTLE GUY!! (I know its a terrible picture but its the only one I took of him on his actual birthday! I think a photo shoot is in the near future 😉 )

I STARTED A BLOG! Ahhhhhh!!!!

My mind is constantly rambling with different thoughts and ideas. Thoughts like “Maybe I should make a command center?”, or “I wonder if I could make this THM appropriate?”, or “How on earth do people keep their children entertained?”. Ideas like garden plans, new recipes to try, more efficient budgeting, and new sewing projects. What better way to get them out of my mind then writing them down on paper?(more like the Internet) So this is exactly what my blog posts will be about! Hopefully some of my posts will help myself, and my readers, to try new things and get some answers to these questions.

I will also be writing about personal happenings to keep my family and friends up to date. There may also be a post here and there about personal opinions and beliefs, so be prepared!
